Color-free flavor and aroma with essences and distillates
Essences are pure aroma volatiles captured from the evaporation of juices and purees. They are excellent alternatives to enrich or balance a flavor or aroma profile, or to simply top-note a finished product. Due to their water-like appearance, essences are especially useful as a substitute of juice concentrate if color is not desired or the fruit juice itself is not available.
Similarly, distillates are captured from the fruit pomace extracted during the juice process. It also provides natural concentrated fruit flavor with no impact in color or texture and are ideal in beverage applications.
